Ingredients:
- 3 cups chicken stock
- 3 cups cubed potatoes
- pepper and minced garlic
- 1/4 cup chopped green onions
- 1 1/2 cups heavy whipping cream
- 3 Tbsp corn starch & 4 Tbsp COLD water
- 1 cup shredded pepper jack cheese
Instructions:
- Boil 3 cups of chicken stock
- Add 3 cups of potatoes
- Add pepper & minced garlic to taste.
- Lower heat and simmer for about 30 minutes.
- Add 1/4 cup chopped green onions
- Add 1 1/12 cups heavy whipping cream
- Let simmer for 15 minutes
- Mix 3 Tbsp of corn starch & 4 Tbsp COLD water in separate bowl, add slowly to soup.
- Bring to a boil.
- Add 1 cup shredded pepper jack cheese.
