Lasagna

Ingredients:

  • 1 tub cottage cheese
  • 1 tub ricotta cheese
  • 2 bags mozzarella cheese
  • 1 jar spaghetti or pizza sauce
  • 1 lb cooked ground beef or turkey added to sauce (optional)
  • 1 box lasagna noodles, uncooked


Instructions:

  1. Mix together, cottage cheese, ricotta, 1 bag mozzarella cheese
  2. Layer the dish with sauce
  3. Add uncooked noodles
  4. Add cheese mixture
  5. Add sauce
  6. Repeat until ingredients are used up, ending with sauce on top
  7. Bake at 350˚ F for about an hour
  8. Test to see if the noodles are done with a fork
  9. 10 minutes before done, sprinkle top evenly with remainder of mozzarella cheese.




Steph's Potato Soup

Ingredients: 

  • 3 cups chicken stock
  • 3 cups cubed potatoes
  • pepper and minced garlic
  • 1/4 cup chopped green onions
  • 1 1/2 cups heavy whipping cream
  • 3 Tbsp corn starch & 4 Tbsp COLD water
  • 1 cup shredded pepper jack cheese


Instructions:

  1. Boil 3 cups of chicken stock
  2. Add 3 cups of potatoes
  3. Add pepper & minced garlic to taste.
  4. Lower heat and simmer for about 30 minutes.
  5. Add 1/4 cup chopped green onions
  6. Add 1 1/12 cups heavy whipping cream
  7. Let simmer for 15 minutes
  8. Mix 3 Tbsp of corn starch & 4 Tbsp COLD water in separate bowl, add slowly to soup.
  9. Bring to a boil.
  10. Add 1 cup shredded pepper jack cheese.

Aunt Frieda's Corn Casserole

Pretty sure you have all ate this before... Probably at a Friendsgiving... it tends to be my go to for potlucks... So, I figured this was the perfect first recipe to post on here!



Ingredients:

  • 2 cans cream style corn
  • 1 Box Jiffy Corn Bread Mix
  • 2 eggs
  • 1/4 cup Vegetable Oil


Instructions:

  1. Preheat oven to 350ยบ F
  2. Whisk eggs well in a small bowl.
  3. In a large bowl, combine all ingredients (I usually put the Jiffy Mix in first).
  4. Mix well with a spoon until just combined.
  5. Pour into an 8x8 or 9x9 pan.
  6. Bake for 40 minutes to 1 hour or until golden brown and set (no longer jiggles)
  7. Just like a cake, you can use a tooth pick to test....
